Peanut Butter Cups
I've tried a couple of different fillings for homemade peanut butter cups and finally found one that I like. This one comes from www.browneyedbaker.com and is just the right consitency for chocolate molds. We've even made our own hollow chocolate Easter bunnies with this as a center. Yummy!!
| 1 | c | Peanut Butter - creamy |
| 1/4 | c | butter |
| 1/4 | c | Sugar - Brown |
| 1 1/4 | c | Sugar - Powdered |
In a medium saucepan, combine the peanut butter, butter and brown sugar over medium heat. Heat until completely melted and starting to bubble a little, stirring constantly. Remove from the heat. Add the powdered sugar a 1/4 cup at a time, stirring until completely combined with the peanut butter mixture after each addition. Set aside and let cool.

Melt chocolate and paint the bottom and sides of the molds. Place in freezer for 5 minutes.
Layer peanut butter mixture on top of hardened chocolate. Spoon additional chocolate on top to form a complete peanut butter cup. Let harden (in freezer or on counter).
